Creamelicious Avocado Dressing
*sigh* Avocado. How I love thee.
Let me count the ways — I love thee in salads. I love thee in soups. I love thee in smoothies. I love thee on crackers and toast. I love thee in dressings. I love thee in guacamole. I love thee in chocolate mousse. I love thee in so many ways. And mostly, I love thee just as you are: plain and delicious.
This creamy avocado dressing is perfect to integrate much-needed healthy fat into your diet. Add it to any salad, green bowl, and even on rice or quinoa!
INGREDIENTS:
1 avocado chopped
1 tablespoon extra-virgin olive oil
½ cup water (a little more if using a large avocado)
1 teaspoon lime zest (or lemon)
1 large or 2 small garlic cloves
1/2 teaspoon sea or Himalayan pink salt
¼ teaspoon pepper
Juice of 1 large lime (or lemon)
1 teaspoon maple syrup (or coconut syrup. If non-vegan honey)
1 teaspoon Dijon mustard
INSTRUCTIONS:
Add all ingredients in a blender or a food processor. Process and blend until smooth and creamy. Add a little more water, if you prefer it to be a little thinner. Add more lime juice, salt & pepper to taste.
